The Niagara winter signature — warm cellar tastings, snow-covered vineyards, and Niagara’s sweetest pours from Inniskillin, Peller, and Pillitteri. The icewine season runs January through March, when the vines have been pruned and the icewine flights are pouring at their best.
Icewine is made from grapes left on the vine through the first hard frost (typically December–January). The grapes freeze, concentrate sugar and acid, and produce a sweet, balanced dessert wine. Niagara is one of three world regions (with Germany and Austria) that produces icewine at scale.
